The Hana Yuzu citrus is a different form of the classic Japanese Yuzu citrus. The fruits are yellow, with a very pleasant aroma and a good amount of juice. They have large seeds, between 10 and 15 in one fruit. The peel is thin and peels very easily. These fruits are widely used in the cuisine of many Asian countries. Under Bulgarian conditions, they are perfect substitutes for lemons and can be used just like them, for example for salads, juices or with fish. But unlike lemons, Hana Yuzu can grow anywhere in Southern Bulgaria, and probably already north of the Balkan Mountains.

Cold damage to the leaves is noticeable at temperatures between -6 and -8 degrees, and below -10 degrees some individual young branches can die off. Around -12 degrees is the critical temperature after which the plant can recover relatively well in the next season. At temperatures between -12 and -15 degrees, the entire plant could die to the ground level or to the snow level. The plant then recovers, but it takes several years for it to start bearing fruit again. Plants grown from seed start bearing fruit between 6 and 8 years of age, and under very good conditions even earlier.

The mother plant we use for propagation has been growing in Asenovgrad (Bulgaria) since 2004 and is currently a tree over 3 meters tall. There were no damages from cold since February 2012 and is now bearing fruit abundantly and annually.

Yuzu citron originated thousands of years ago in China as a natural hybrid between mandarin and Ichang papeda, from which it inherited its great cold hardiness. It produces edible fruits that are widely used in Japanese and Korean cuisine. In addition to their thousands of applications for juices, tea, cooking sauces, jams and even vinegar, the fruits can simply be used as a substitute for lemons in our kitchen. Their juice is fragrant and sour, with very pleasant notes.

When grafted on Citrus (Poncirus) trifoliata rootstock or on its own roots (from seed), this type of citrus plant can withstand without serious damage to about -12° C, and the plants can freeze to the ground with a long-term drop in temperature to -15° C or more. Even after dying to ground level, they recover quickly in the spring.

Yuzu citron can be grown without any protection on the southern Black Sea coast and in the warmer parts of southern Bulgaria, where figs do not freeze and are large trees. In other parts of the country, Yuzu can be grown with more or less winter protection, because unprotected plants will freeze to the ground too often and will not bear fruit.
